It's pretty much the same as all other disc brake bikes/vehicles in general.
Check lines for leaking and cracking get an eyeball on the pads if ya can.  Make sure nothing's coming loose.  Retorque it if you really want, but if it's tight generally don't worry too much

The pads should be somewhat even and if they're about half down it's not a bad idea to have a spare set of pads around.  Brake pads are cheaper than facework.  Annoying to replace but doable.  I suspect your brakes are similar to the HD from the same vintage, if not identical.

Also if the bike's brake fluid hasn't been bled through it's not a bad idea to do that every year or two.  DOT 3 or 4 spec most likely not insanely hard to do just don't get any brakefluid on the bike's bodywork, it'll eat the paint, maybe gnaw the plastic a bit too.

Found a manual online.  The link has a pic too but it's not real informative, just of a disconnected brake line.

DISK BRAKE INSPECTION (Applicable for model equipped with disc brake.)
(Leak, damaged, looseness of brake line)
Visual check brake lines for leakage, or damage, check
brake lines connections for looseness using a wrench or
similar tool, and check whether steering handle vibration
in driving, or any parts' interference may have damage
the brake lines. If so, bring your scooter to your
SANYANG dealer for repairing or service.
